Our organic mince pies

What’s a festive season without mince pies, right? Well did you know it takes almost a year to perfect our mincemeat mixture?

January – a ‘starter’ is added to dried fruit, lemon, orange & sugar (the ‘starter’ is a portion of last year’s mincemeat which has been kept to ‘activate’ the fermentation process of the new batch). Each week a little more of each ingredient is added to the mixture.
August – the first of the new seasons’ apples are ready!
September – the apples are added to the mixture along with all the lovely festive spices. Every day the mixture is stirred by hand.

The result… a deliciously tart, not too syrupy mincemeat (most of the sugar is eaten up in the fermentation process) ready to be cased in pastry, baked and devoured!
