Carrot Cake Energy Balls Recipe

Energy balls are a big thing nowadays. These bite sized, on-the-go snacks are packed with dried fruits, nuts and other delicious things which also means that they contain fibre, are a good source of protein and healthy fats.

We love our Carrot Cake version of these little balls, and have decided to let you create your own by letting you in to our secret recipe.

What you’ll need (makes 15 balls):
  • 60g walnuts
  • 60g pecans
  • 60g gluten free porridge oats
  • 130g grated carrot
  • 60g chopped dates
  • 2tbsp agave
  • 1tsp cinnamon
  • Desiccated coconut (to roll in)
How to make (it’s super simple):
  1. Place all the ingredients (apart from the desiccated coconut) in to a food processor or Nutri Bullet
  2. Blend until you have a slightly chunky mix
  3. Roll into small balls  (aim to get 15 out of this recipe)
  4. Roll each ball in desiccated coconut to coat
  5. Store in the fridge – they’ll keep for 4-5 days (but might not last that long!)
